i was just out in the garden watching visiting the lavender and remembered a recipe i wanted to try
It's Summer: Lavender Cookies
Combine and beat well:
1 1/2 c. butter at room temp.
2/3 c. white granulated sugar
2 T. chopped fresh or dried lavender flowers
2 tsp. chopped fresh mint*
Then combine and mix in
2 1/2 c. white flour
1/2 c. cornstarch (i think this is cornflour in Europe)
1/4 tsp. salt
Divide dough into 2 blocks. Wrap well and refrigerate until firm, two hours or overnight.
On a lightly floured board, roll each block into a rectangle approx. 9 x 8 x 1/4 inches.
In each rectangle, score lines in rows and columns of 4 x 6 , cut apart and place the small shapes on baking sheets.
325 F. for 12 - 14 min.
Cool tins for 5 min. out of the oven, remove cookies to a wire rack to cool completely. Dust lightly with confectioner's sugar.
*bess substitute: a dark-leafed variety called Chocolate Mint, doesn't smell chocolate-y to me
also using canola oil margarine rather than butter and halving the recipe for the first go. i'm sure the dough can be cut differently or formed into logs and sliced rather than fussing with the cutting
if they look good enough there will be a promise!
Those sound lovely! Are they at all similar to short bread? There is a small creamery near here that makes Lavender ice cream, it is sublime.
