Apple & Carrot Loaf/Cake

Beat together until well incorporated:

3 eggs

2/3 cup honey

½ cup canola oil (or vegetable oil of choice)

½ cup brown sugar


Mix dry ingredients in separate bowl:

2 ¼ cups flour

1 cup rolled oats

5 tsps baking powder

1 ½ tsps cinnamon

½ tsp ginger

½ tsp salt

Whisk together, then fold into the mix.


Mix in another bowl and incorporate by hand:

1 cup shredded apples

1 cup shredded carrots

½ cup chopped walnuts or pecans


Pour into greased and floured 9x5x3 inch loaf pan. Bake in preheated 350F oven for one hour; or until tested done. Let rest for 5 minutes and cool on rack. Wrap in foil and mellow one day before cutting.


Moi: used 1/2 cup honey, no brown sugar. Baked in a 9 x 9 inch sq. cake pan for 30 minutes. And I did wait overnight to try it :angel:

It was :oh: and it is a keeper!

Another time I'll substitute 1 c. unsweetened shredded coconut for the rolled oats.

Pineapple Muffins
1 egg 1/2 tsp. salt 2 tbsp. sugar
1 cup pineapple juice (not raw) 4 tsp. baking powder 1 tsp. grated orange rind
1/4 cup vegetable oil 1/4 cup sugar
2 cups flour
Beat the egg and pineapple juice; add shortening. Add flour with salt, baking powder and 1/4 cup sugar, just until moistened. (I had actually cooked up some fresh crushed pineapple so used the resulting liquid)*
Fill muffin cups two-thirds full. Sprinkle with the 2 tbsp. sugar mixed with orange rind.
Bake in hot oven (400 F) 25 minutes. Makes one dozen not too large muffins.
*my sender wrote this. I think it would have proper pineapple flavour :yes2:

yes! or if you are lucky to have a fresh one, squeeze juice out of it, bring to boil and cool. although i don't know why raw shouldn't work in this case.

Raw has some enzymes with weird properties, I think :wink:

i know it doesn't set gelatin.

now that you mention enzymes, it might curdle the egg :shock:

Hasty Apple Pudding

 

Filling:

4 cups sliced apples

2 tablespoons sugar

1/2 tsp. cinnamon

1/4 tsp. nutmeg

2 tablespoons butter

1/4 cup hot water

 

Batter:

2 eggs

1 cup sugar

1/4 cup melted butter

2/3 cup flour

2 tsp. baking powder

1/2 tsp. salt

 

Spread the sliced apples into a buttered 9" x9" baking dish. Blend the sugar, cinnamon and nutmeg: sprinkle over the apples. Melt the butter in the 1/4 c. hot water and pour over the apples.

Make batter: Beat eggs, add the sugar, keep on beating. Then beat in the melted butter. Add the flour, b.p. and salt, beating until smooth.

Spread evenly over the apples in the baking dish.

bake 350 deg. F for 30 min. or until apples are soft and top is brown. Serve warm or cold.

This is a light, tasty pudding with a crisp meringue-like top.

 

Of course other fruit can be used, or a combination (moi, 2 c. apples, 2 c. blueberries), more or less spice amounts, and less sugar in the batter to taste, though the meringue-like texture becomes pancake-y. No big deal :dunno: I don't use butter, instead melted coconut oil in the hot water for the filling, and used canola oil in the batter

I would have used coconut oil but hadn't much left in the jar :panic:

 

Halve the amounts for a smaller pan, 7 x 7 e.g.
